Petershof- Niedemennig Sonnenberg Riesling Kabinett 21

Our wine from Sonnenberg in Niedermennig comes from 30-year-old vines with real roots. Their shale soil has a high proportion of fine soil and a good water supply. The grapes were picked by hand and gently pressed as whole grapes. The must, which was only slightly clarified by sedimentation, was spontaneously fermented for four months in the old barrel. The wine rested on the full yeast until shortly before filtration in mid-March 2021. On the nose, ripe yellow fruits, plus a strong spice on the palate. Acid and residual sugar are perfectly buffered by the old wood.
