Pépière Muscadet "Monnières-St Fiacre" 2020
MONNIÈRES – SAINT FIACRE Cru is planted on a subsoil of gneiss, covered by a fine top soil of sandy limestone. This results in moderately early maturity and fertility with regular ripening. The constant winds around the vines help keep the vines airy.
After a year of careful work in the vineyard, the grapes are harvested by hand and carefully brought back to the cellar. Whole bunches with stalks are compressed pneumatically. The grape juice is easily separated from the sediment and naturally ferments in glass-lined, underground vats for approximately two months using native yeast cells. The wine is aged for at least two years with its fine lees, which are occasionally stirred. This aging process gives the wine a robust structure.
Serve the wine decanted at 12-14°C. It has a subtle bitterness and a touch of refreshing citrus that can accompany the whole meal, from aperitif to cheese. The wine is particularly suitable for fish dishes.
