Pépie Cabernet is a red "Vin de Pays" produced on the slopes of La Pépière. These southwest-facing slopes lie on granite subsoil with many exposed rock sections.
The vines are grown organically or are being converted. We do not use herbicides and the soil is plowed and scraped. To protect the vines, we use sulphur, copper and various plants, but no synthetic substances.
VINIFICATION The grapes are harvested manually when they are fully ripe, de-stemmed and left in tanks for a week. Fermentation begins with a four-day cold maceration. Only free-flowing juice is used for this cuvée. The wine matures for five months in steel tanks.
