Gigognan Châteauneuf-du-Pape Cardinalice 2020 is a 100% Grenache wine that originates from the iconic clay-limestone soil layer, covered with rolled pebbles. This unique soil ensures optimal drainage and heat for the vines, giving the grapes excellent ripening.
The wine is produced with great care: the grapes are harvested manually and sorted thoroughly to ensure the highest quality. Fermentation takes place in elegant concrete tulip vats using 10-15% whole bunches. Here, a gentle extraction is used through overpumping and careful stirring, which emphasizes the natural character of the grapes. Fermentation is followed by two weeks of maceration, before the wine is stored for 12 months in foudres and finally 6 months in concrete vats.
