This Sauvignon Blanc is made from grapes from 18-21 year old vines growing on clay and limestone soils (Kimmeridgian Terres Blanches) just opposite Sancerre. The wine is grown organically and biodynamically without added sulphites, and fermentation takes place with natural yeast strains. Aging on lees for at least 6 months adds complexity.
The taste is fresh and mineral with lively notes of citrus, green apples and white flowers, combined with a slightly creamy texture. The clean and intense fruit is accompanied by a persistent, fresh acidity that creates a nice balance.
