The vineyard has been organically run for 12 years, and the grapes are harvested manually from vines that are between 5 and 45 years old. The wine ferments spontaneously with natural yeast cells and is stored for 8 months on fine lees in steel tanks.
The aromas are fresh and fruity, with notes of white peach and white flowers. The taste is fresh with a light almond finish. The wine is suitable for fish in sauce, pies, Chablis ham and other charcuterie. It should be served at 10-12°C.
