Production and Philosophy
Francis Boulard & Fille represents a microscopic champagne house with only 3 hectares of vineyards and an annual production of approximately 30,000 bottles . Today, the production is led by Delphine Boulard , who continues the family's focus on terroir-influenced wines with mineral precision and beautiful balance.
Les Murgiers is the house's entry-level wine, but it possesses a quality and finesse that surpasses its category. It is produced as a Brut Nature , which means that no dosage is added.
Vinification
- Grapes : 84% Meunier, 10% Chardonnay and a small proportion of Pinot Noir.
- Must : Made only from the first must from the first pressing, called la cuvée .
- Fermentation : Takes place with the must's own natural yeast.
- Ageing : Vinified in small, old oak barrels to develop complexity.
The wine is a blend, the majority of which comes from the 2020 harvest , combined with 20% reserve wine , which adds depth and balance.
Tasting notes
- Color : Beautiful golden/copper hue.
- Nose : Complex and inviting nose with aromas of fresh raspberries (framboise) , spicy orange peel, sea-salted notes of oyster shells and a hint of beeswax.
- Taste : Full-bodied and aromatic with a soft and creamy mousse. The mid-palate is characterized by generous fruit, ending with a mineral and refreshing finish.
Serving and Shelf Life
- Serving temperature : 8-10°C to highlight the freshness and complexity of the champagne.
- Shelf life : Drinkable now for its purity and aromatic depth, but will develop further complexity over 3-5 years .
